Ingredients
  

For the Meatballs
  • 1 pound Ground Chicken Substitute with ground turkey if needed.
  • 1 large Egg Acts as a binder.
  • 1/2 cup Breadcrumbs Plain or panko works well.
  • 2 tablespoons Olive Oil For cooking.
  • 1/2 cup Crumbled Feta Cheese Opt for authentic Greek feta.
  • 1/4 cup Fresh Parsley Can substitute with fresh dill.
  • 1 teaspoon Dried Oregano Fresh oregano is a great substitute.
  • 2 cloves Garlic Minced, adjust according to taste.
  • 1 tablespoon Lemon Zest Adds brightness.
  • 1 tablespoon Lemon Juice Using fresh is best.
  • 1 teaspoon Salt Basic seasoning.
  • 1/2 teaspoon Black Pepper Basic seasoning.
For the Lemon Orzo
  • 1 cup Orzo Pasta Can substitute with gluten-free pasta or rice.
  • 2 cups Chicken Broth Can replace with water.
  • 1 tablespoon Butter or Olive Oil Adds richness.
  • 2 tablespoons Fresh Dill Optional, for garnish.

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine the ground chicken, egg, breadcrumbs, crumbled feta, chopped parsley, dried oregano, minced garlic, lemon zest, salt, and pepper. Mix gently until just combined.
  2. With damp hands, scoop out portions and shape into balls about 1.5 inches in diameter.
  3. Heat a skillet over medium heat, add olive oil, and cook the meatballs for 4-5 minutes on each side until golden brown.
Orzo Preparation
  1. In a pot, bring chicken broth to a boil, then add the orzo and cook according to package instructions.
  2. Strain the orzo after cooking and return it to the pot.
  3. Stir in butter or olive oil, lemon juice, and minced garlic; season with salt and pepper.
Serving
  1. Place a scoop of lemon orzo on each plate, top with Greek Chicken Meatballs, and garnish with parsley or dill.
