Meatball Preparation
- In a large mixing bowl, combine the ground chicken, egg, breadcrumbs, crumbled feta, chopped parsley, dried oregano, minced garlic, lemon zest, salt, and pepper. Mix gently until just combined.
- With damp hands, scoop out portions and shape into balls about 1.5 inches in diameter.
- Heat a skillet over medium heat, add olive oil, and cook the meatballs for 4-5 minutes on each side until golden brown.
Orzo Preparation
- In a pot, bring chicken broth to a boil, then add the orzo and cook according to package instructions.
- Strain the orzo after cooking and return it to the pot.
- Stir in butter or olive oil, lemon juice, and minced garlic; season with salt and pepper.
Serving
- Place a scoop of lemon orzo on each plate, top with Greek Chicken Meatballs, and garnish with parsley or dill.
