Step‑by‑Step Instructions for Garlic Butter Steak and Potatoes
  1. Begin by heating a large cast iron skillet over medium-high heat. Add 2 tablespoons of olive oil and 2 tablespoons of unsalted butter, allowing them to melt and combine.
  2. Add the diced Yukon Gold potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook undisturbed for about 4 minutes.
  3. Increase the heat to high and add the remaining 2 tablespoons of butter to the skillet. Once melted, add the sirloin steak, spacing the cubes in a single layer.
  4. With the steak perfectly seared, return the cooked potatoes to the skillet. Gently toss to combine and adjust the seasoning if needed.
  5. Remove the skillet from heat and sprinkle freshly chopped parsley over the top. Serve hot.
