  • 1 pound monkfish fillets
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Lemon wedges for serving

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pat the monkfish fillets dry with paper towels and season both sides with salt and black pepper.
  3. In an oven-safe skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  4. Add the lemon juice and zest to the skillet, stirring to combine.
  5. Place the monkfish fillets in the skillet, spooning some of the garlic butter over the top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Remove from the oven and sprinkle with chopped parsley. Serve with lemon wedges on the side.
