Method
 

Step-by-Step Instructions
  1. In a medium bowl, whisk together ¼ cup of olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of dried oregano, and 1 teaspoon of dried basil. Season with salt and pepper to taste. Set aside.
  2. Trim the ends of 1 English cucumber and peel if desired. Score lengthwise with a fork, then slice thinly and dice into bite-sized pieces.
  3. In a large bowl, combine diced cucumber with 1 cup of halved cherry tomatoes and ¼ cup of finely diced red onion. Toss to distribute evenly.
  4. Tear or cut 8 ounces of fresh mozzarella into pieces and add to the bowl. Gently fold into the salad.
  5. Pour the marinade over the salad and gently toss everything together until well-coated.
  6. Allow the salad to sit for 10 minutes at room temperature to enhance flavors.
