Ingredients
  

  • 1 box 15.25 oz white cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup whipped topping like Cool Whip
  • 1 cup strawberries diced
  • 1 cup blueberries
  • 1/2 cup red and blue sprinkles
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, combine the cake mix, water, vegetable oil, and eggs. Beat on medium speed for about 2 minutes until well blended.
  3. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  4. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  6. Once cooled, frost each cupcake with whipped topping.
  7. Decorate with diced strawberries, blueberries, and a sprinkle of red and blue sprinkles.
  8. Drizzle with a little vanilla extract for added flavor.
