Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
Make a well in the center of the mixture and pour in the milk and honey (if using). Stir gently until just combined; do not overmix.
Turn the dough out onto a lightly floured surface and knead gently for about 30 seconds until it comes together.
Pat the dough into a rectangle about 1-inch thick. Use a biscuit cutter or a glass to cut out biscuits and place them on the prepared baking sheet.
Gather any scraps, re-pat, and cut out additional biscuits until all the dough is used.
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.
Remove from the oven and let cool slightly before serving.
