Method
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chopped spinach, asparagus, cherry tomatoes, feta cheese, olive oil, garlic powder, oregano, salt, and pepper. Toss until the vegetables are well coated.
- Place the flatbreads on a baking sheet. Evenly distribute the vegetable and feta mixture over the flatbreads.
- Bake in the preheated oven for 12-15 minutes, or until the flatbreads are crispy and the vegetables are tender.
- Remove from the oven and drizzle with fresh lemon juice. Garnish with fresh basil leaves if desired.
- Slice and serve warm.
