Step-by-Step Instructions
- Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with olive oil or butter.
- In a large mixing bowl, combine ground beef or chicken, breadcrumbs, egg, chopped onion, minced garlic, soy sauce, sesame oil, black pepper, and salt. Mix gently until just combined.
- Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter. Make 20-24 meatballs and place them on a platter.
- Heat olive oil in a skillet over medium heat. Sear the meatballs for about 2-3 minutes on each side until browned.
- In a saucepan, combine honey, soy sauce, ketchup, water, and minced garlic. Stir over medium heat until mixture comes to a boil.
- Spread uncooked white rice in the bottom of the greased baking dish. Sprinkle diced bell peppers and frozen peas over the rice. Drizzle with olive oil.
- Pour chicken or vegetable broth over the rice and vegetables, stirring lightly to combine.
- Nestle the browned meatballs on top of the rice and vegetables, evenly spaced.
- Drizzle the honey garlic glaze over the whole dish.
- Cover with foil and bake for 40 minutes. Remove foil and bake for another 10-15 minutes, until rice is tender and top is browned.
- Let the dish rest for 5-10 minutes before serving. Garnish with chopped green onions.
