  1. Preheat your oven to 360°F (182°C). Slice zucchini in half lengthwise and scoop out the seeds.
  2. In a skillet, add olive oil over medium heat. Sauté diced onion for 3-4 minutes until softened.
  3. Add ground beef, breaking it apart. Cook for 5-7 minutes until browned. Drain excess fat if necessary.
  4. Stir in reserved zucchini flesh, tomato paste, and dried herbs. Pour tomato sauce and simmer for 15 minutes.
  5. Fill zucchini halves with the beef mixture. Top with cheese, place in a baking dish, and bake for 20-25 minutes.
