- Preheat your oven to 375°F (190°C). Melt cubed salted butter in the baking dish in the oven to coat the bottom evenly.
- In a large mixing bowl, whisk together the all-purpose flour, 3/4 cup brown sugar, baking powder, cinnamon, and kosher salt.
- Stir in the milk and vanilla to the dry ingredients until just combined. The batter should be smooth and slightly thick.
- In another bowl, toss sliced peaches with 1/4 cup brown sugar and maple syrup. Allow to rest for 5 minutes.
- Layer half of the peaches in the bottom of the baking dish over the melted butter.
- Pour the batter over the first layer of peaches without stirring.
- Sprinkle the remaining peach slices over the batter.
- Bake for 50–55 minutes, until edges are golden brown and center is set.
- Prepare the maple butter by combining the remaining butter and maple syrup in a saucepan and boiling for 2 minutes.
- Let the cobbler cool slightly before serving warm, topped with vanilla ice cream and maple butter.
