Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Melt cubed salted butter in the baking dish in the oven to coat the bottom evenly.
  2. In a large mixing bowl, whisk together the all-purpose flour, 3/4 cup brown sugar, baking powder, cinnamon, and kosher salt.
  3. Stir in the milk and vanilla to the dry ingredients until just combined. The batter should be smooth and slightly thick.
  4. In another bowl, toss sliced peaches with 1/4 cup brown sugar and maple syrup. Allow to rest for 5 minutes.
  5. Layer half of the peaches in the bottom of the baking dish over the melted butter.
  6. Pour the batter over the first layer of peaches without stirring.
  7. Sprinkle the remaining peach slices over the batter.
  8. Bake for 50–55 minutes, until edges are golden brown and center is set.
  9. Prepare the maple butter by combining the remaining butter and maple syrup in a saucepan and boiling for 2 minutes.
  10. Let the cobbler cool slightly before serving warm, topped with vanilla ice cream and maple butter.
