- In a small saucepan, bring 4 cups of apple cider to a boil and simmer until reduced to 1 cup, about 45 minutes.
- In a large bowl, whisk together 2 cups of flour, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 1 teaspoon of salt. Add spices and mix well.
- In another bowl, combine cooled cider, 1 cup of light brown sugar, 1/2 cup of granulated sugar, 2 eggs, and 1/4 cup of melted butter. Mix until smooth.
- Pour wet ingredients into the dry mixture and mix until just combined. Cover and refrigerate for 2 to 12 hours.
- Flour a clean surface and roll out the dough to 1/2-inch thickness. Cut out donut shapes.
- Heat oil to 350°F (175°C) in a pot or deep skillet.
- Fry donuts for 1-2 minutes per side until golden brown. Drain on a wire rack.
- Coat warm donuts in cinnamon-sugar mixture.
- Serve warm, paired with cider or coffee.
