  • 1 lb Italian Sausage pre-cooked and drained
  • 8 oz Mushrooms or substitute with spinach/bell peppers
  • 1 cup Green Peppers or red/yellow for sweetness
For the Sauce
  • 1 cup Pasta Sauce high-quality marinara recommended
For the Toppings
  • 4 oz Pepperoni or turkey pepperoni
  • 12 oz Mozzarella Cheese or mix with cheddar
  • 1/4 cup Parmesan Cheese or nutritional yeast for dairy-free
For Flavor Enhancement
  • 1 tbsp Italian Seasoning fresh mix recommended

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Microwave cauliflower florets with a splash of water for 3 minutes until tender. Drain and pat dry.
  3. In a skillet, brown the Italian sausage for about 15 minutes and drain excess grease.
  4. Sauté mushrooms in the same skillet for about 10 minutes until tender.
  5. Grease casserole dish and spread ½ cup of pasta sauce on the bottom.
  6. Combine steamed cauliflower, cooked sausage, sautéed mushrooms, and chopped green peppers in a large bowl.
  7. Layer half of the mixture in the casserole dish, top with ½ cup sauce, half of the pepperonis, and 6 oz of mozzarella cheese.
  8. Repeat the layering with remaining mixture, sauce, pepperonis, and mozzarella.
  9. Blend Parmesan cheese with Italian seasoning and sprinkle over the top.
  10. Bake for about 30 minutes until cheese is melted and golden.
  11. Allow to cool for 10-15 minutes before slicing and serving.
