- Pat the pork chops dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat. Add potatoes and sauté for about 10 minutes until tender.
- Push potatoes to the side, sear pork chops for 4-5 minutes on each side until golden brown.
- Whisk together honey, Dijon mustard, apple cider vinegar, and minced garlic in a small bowl.
- Pour honey mustard sauce over the pork and potatoes, simmer for 2-3 minutes.
- Let rest for a couple of minutes before serving, garnish with parsley or thyme if desired.
