Step‑by‑Step Instructions
  1. Start by finely chopping one medium onion, a few cloves of garlic, and a handful of fresh parsley. In a large bowl, combine these ingredients with one pound of ground chicken. Ensure everything is evenly mixed.
  2. Add one teaspoon each of ground cumin and ground coriander to the chicken mixture, along with salt and black pepper to taste. Mix thoroughly until seasoning is evenly distributed.
  3. Scoop the chicken mixture to form elongated oval shapes, about the size of your palm. Aim for 10-12 evenly sized kofta.
  4. Preheat your grill to medium-high heat, around 375°F (190°C), and brush it lightly with olive oil. Grill the kofta for 5-7 minutes per side, or until they turn golden brown and reach an internal temperature of 165°F (75°C).
  5. While the kofta are grilling, prepare the garlic yogurt sauce by mixing one cup of plain yogurt with the juice of half a lemon and a pinch of salt.
