  1. In a large pot, heat over medium heat, add diced bacon, and cook until crispy, about 5–7 minutes.
  2. Remove the bacon and set it aside, leaving the bacon fat in the pot.
  3. Add 2 tablespoons of butter to the pot with the bacon fat, swirling until melted.
  4. Toss in one finely chopped onion and sauté until soft and translucent, around 3–4 minutes.
  5. Next, add 2 minced garlic cloves, cooking for an additional minute until fragrant.
  6. Pour in 4 cups of chicken broth, bringing to a gentle simmer, about 5 minutes.
  7. Stir in 1 cup of heavy cream and optional dried thyme, letting flavors meld for another 2 minutes.
  8. Add 1 pound of gnocchi to the broth, cooking them for 2–3 minutes until they float.
  9. Lower the heat to medium-low, stir in 1 ½ cups of shredded sharp cheddar cheese until melted.
  10. Season the soup with salt and pepper to taste.
