Ingredients
  

  • 2 cups fresh strawberries hulled and sliced
  • 1 large cucumber peeled and diced
  • 1/4 red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced strawberries, diced cucumber, and red onion.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to coat all the ingredients.
  4. Add the crumbled feta cheese and chopped mint leaves, then toss lightly again.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
