Preparation Steps
  1. Layer the boneless, skinless chicken breasts in the bottom of your crockpot. Season with garlic powder, onion powder, salt, and black pepper.
  2. Pour the low-sodium chicken broth and heavy cream over the chicken, drizzle with olive oil, and sprinkle Dijon mustard.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, checking for tenderness.
  4. About 30 minutes before serving, add the fresh broccoli florets to the crockpot and stir gently.
  5. Shred the chicken in the crockpot using two forks and combine with the sauce.
  6. Stir in the shredded cheddar and grated Parmesan cheese until melted and fully incorporated.
  7. Serve warm, garnishing with extra cheese if desired, and enjoy with crusty bread or a fresh salad.
