Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, baking powder, garlic powder, Italian seasoning, salt, and Parmesan cheese. Mix well.
Add the shredded mozzarella cheese, water, and olive oil to the dry ingredients. Stir until a dough forms.
On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Use a pizza cutter or knife to cut the dough into small squares or triangles.
Place the cut pieces onto the prepared baking sheet, leaving some space between each piece. If desired, sprinkle crushed red pepper flakes on top for extra flavor.
Bake in the preheated oven for 10-12 minutes, or until the chips are golden brown and crispy.
Remove from the oven and let cool slightly before serving with pizza sauce for dipping.
