Preheat your oven to 400°F. Line a baking sheet with parchment paper.
In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix until well combined.
Using a tablespoon, drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each spoonful slightly with the back of the spoon.
Drizzle the olive oil over the chips and sprinkle with fresh herbs if using.
Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy. Keep an eye on them to prevent burning.
Remove from the oven and let cool for a few minutes before serving. Enjoy as a snack or appetizer!
