In a separate bowl, beat the eggs.
Place the breadcrumbs in a third bowl.
Coat each piece of chicken in the flour mixture, shaking off excess, then dip in the beaten eggs, and finally coat with breadcrumbs.
Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Cook for about 4-5 minutes or until golden brown and cooked through.
Remove the nuggets with a slotted spoon and drain on paper towels.
