  • 1 cup cooked shredded chicken
  • 1 cup finely chopped broccoli florets
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Method
 

  1. In a large bowl, combine the cooked chicken, chopped broccoli, cheddar cheese, breadcrumbs, eggs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Heat olive oil in a large skillet over medium heat.
  3. Using a spoon or your hands, form the mixture into small patties, about 2-3 inches in diameter.
  4. Once the oil is hot, add the fritters to the skillet, cooking in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  6. Serve warm with your favorite dipping sauce.
