  • 1 pinch ground cinnamon optional

For the Salad
  • 1 cup coarsely chopped walnuts or pecans
  • 1 medium finely diced shallot or red onion
  • 6 cups mixed greens arugula or baby spinach
  • 1 medium sweet-tart apple Honeycrisp or Pink Lady
  • 1/2 cup dried cranberries or cherries or raisins
  • 1/4 cup roasted pumpkin seeds or sunflower seeds
  • 1/3 cup crumbled fresh goat cheese or feta cheese

Method
 

Step-by-Step Instructions
  1. In a jar, combine the dressing ingredients and shake vigorously for about 30 seconds until well blended.
  2. Preheat a skillet over medium heat and toast the walnuts for 3–4 minutes until golden brown.
  3. In a large bowl, combine mixed greens and shallot, drizzle with half the dressing, and toss gently.
  4. Slice the apple and arrange on the salads, adding cranberries, pumpkin seeds, and goat cheese.
  5. Drizzle the remaining dressing and add walnuts on top, gently toss before serving.
