Preparation Steps
- In a medium bowl, add 1 cup of rolled oats and 1 cup of unsweetened almond milk. Stir together until well-combined. Cover and let rest for 5 minutes.
- Add ½ cup of plain Greek yogurt, 2 ounces of cream cheese, 2 tablespoons of honey, and 1 teaspoon of vanilla extract to the oat mixture. Whisk until smooth and creamy.
- Gently fold in 1 cup of chopped fresh strawberries and 1 tablespoon of chia seeds into the creamy oat mixture.
- Divide the mixture into 2-4 jars or bowls. Seal and place in the fridge overnight to chill.
- Top with crushed graham crackers or granola before serving.
- Serve chilled or let sit at room temperature for a few minutes if desired.
