  • 2 pounds Yukon Gold Potatoes other waxy potatoes can be used
  • 1 medium Yellow Onion or shallots for a milder flavor
For the Cheesy Layer
  • 2 cups Grated Cheddar Cheese or mozzarella/dairy-free cheese

Step-by-Step Instructions for Cheesy Scalloped Potatoes
  1. Preheat your oven to 400°F (200°C) and grease a 9x13-inch baking dish with unsalted butter.
  2. In a medium skillet, melt 4 tablespoons of unsalted butter over medium heat and whisk in ¼ cup of all-purpose flour for 1 minute.
  3. Slowly whisk in 2 cups of whole milk and 1 cup of vegetable broth into the roux, cooking until slightly thickened, around 2 to 3 minutes.
  4. Slice 2 pounds of Yukon Gold potatoes thinly and arrange half in the greased baking dish followed by half the onions, half the cheese sauce, and 1 cup of grated cheddar cheese.
  5. Repeat the layers with the remaining ingredients, ensuring even distribution.
  6. Cover with aluminum foil and bake for 30 minutes, remove the foil and bake uncovered for an additional 35-40 minutes.
