For the Base
  • 2 cups half & half Substitute with heavy cream for more thickness.
  • 1/2 cup pumpkin puree Ensure it's pure pumpkin, not pie filling.
  • 1/4 cup molasses Can substitute with brown sugar for lighter flavor.
  • 1/2 cup sweetened condensed milk Can be omitted for a lower sugar version.
For the Flavor
  • 2 teaspoons pumpkin pie spice For a twist, mix your own with cinnamon, ginger, nutmeg, and allspice.
  • 1 teaspoon vanilla extract Choose almond for a nuttier note or vanilla for a classic touch.

Equipment

  • Small saucepan
  • Whisk
  • Fine mesh strainer
  • Cheesecloth
  • Seal container

Method

Step-by-Step Instructions
  1. In a small saucepan over low heat, whisk together 2 cups of half & half, 1/2 cup of pumpkin puree, 1/4 cup of molasses, 1/2 cup of sweetened condensed milk, 2 teaspoons of pumpkin pie spice, and 1 teaspoon of vanilla extract.
  2. Continue to heat the mixture on low until it begins to lightly simmer, approximately 5 minutes.
  3. Once simmering, remove the saucepan from heat and let it cool for about 10-15 minutes.
  4. To ensure a smooth finish, line a fine mesh strainer with cheesecloth and pour the cooled mixture through it into a large bowl or pitcher.
  5. Transfer the strained liquid into a sealable container and refrigerate.
