  • 3 cups dry elbow macaroni or rotini/small shells
  • 1 can black beans drained
  • 1 cup sweet corn fresh or thawed
  • 1 each red bell pepper diced
  • 1 each green bell pepper diced
  • 1 each red onion finely chopped
  • 1 cup chopped cilantro
For the Dressing
  • 1 cup mayonnaise or dairy-free
  • 1/2 cup sour cream or dairy-free
  • 2 tablespoons lime juice freshly squeezed
  • 2-3 tablespoons taco seasoning to taste
  • salt to taste
  • black pepper to taste
Optional Garnishes
  • shredded cheddar cheese or dairy-free cheese
  • extra cilantro
  • lime wedges

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add macaroni and cook for 8-10 minutes. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, lime juice, taco seasoning, salt, and pepper until smooth.
  3. In a large bowl, combine macaroni, black beans, sweet corn, bell peppers, red onion, and cilantro. Fold together.
  4. Pour dressing over the salad mixture and gently toss to coat.
  5. Cover and refrigerate for at least 1 hour.
  6. Stir before serving and garnish with cilantro and lime wedges.
