Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Lightly coat a 9x13-inch casserole dish with nonstick cooking spray.
  3. In a large mixing bowl, combine shredded chicken, instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, undrained diced tomatoes with green chilis, chicken broth, fajita seasoning, and half the shredded cheese. Mix well.
  4. Transfer the mixture into your prepared casserole dish, spreading it evenly.
  5. Cover the casserole dish tightly with aluminum foil and bake for 35 minutes.
  6. Remove the foil and sprinkle the remaining cheese on top. Return to the oven and bake uncovered for an additional 10 minutes.
  7. Allow it to rest for a few minutes and garnish with freshly chopped cilantro and green onions before serving.
