Ingredients
  

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 2 cups fresh spinach
  • 1 package 5.2 oz Boursin cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup fresh basil chopped

Method
 

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add cherry tomatoes to the skillet and cook until they start to soften.
  4. Stir in the fresh spinach and cook until wilted.
  5. Add the cooked orzo to the skillet and mix well with the vegetables.
  6. Stir in the Boursin cheese until melted and creamy.
  7. Mix in the grated Parmesan cheese and season with salt and pepper to taste.
  8. Garnish with fresh basil before serving.
