  • 0.5 cup Orange Juice Concentrate Fresh orange juice can be used if needed.
  • 0.5 cup Orange Marmalade Apricot jam is a suitable replacement if unavailable.
  • 1 tablespoon Rosemary Chopped fresh rosemary; dried rosemary works well too.
For the Turkey

Equipment

  • medium saucepan
  • roasting pan
  • meat thermometer
  • Baking Dish

Method

Step-by-Step Instructions
  1. Begin by preparing your turkey pieces. Rinse under cold water and pat dry. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine cranberry juice, orange juice concentrate, orange marmalade, and rosemary. Heat over medium, stirring until blended and thickened, about 5-7 minutes.
  3. Generously brush the glaze over turkey pieces, reserving one-third for later basting.
  4. Place the glazed turkey pieces in a roasting pan and roast for about 120 minutes or until the internal temperature reaches 165°F (74°C).
  5. Halfway through roasting, brush the turkey again with reserved glaze for added flavor.
  6. Once cooked, let the turkey rest for 15-20 minutes before slicing for maximum juiciness.
