Ingredients
  

  • 2 cups cinnamon roll dough store-bought or homemade
  • 1 cup cream cheese softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/4 cup chopped pecans optional
  • 1/4 cup powdered sugar for dusting

Method
 

  1. Preheat your oven to 350°F. Grease a 9-inch springform pan with non-stick cooking spray.
  2. Roll out the cinnamon roll dough and cut it into small pieces. Press half of the dough pieces into the bottom of the prepared springform pan to form a crust.
  3. In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth. Add sour cream, vanilla extract, and eggs, mixing until well combined.
  4. In a separate bowl, mix honey, ground cinnamon, and brown sugar. Stir this mixture into the cream cheese mixture until fully incorporated.
  5. Pour the cream cheese mixture over the crust in the springform pan. Sprinkle the remaining cinnamon roll dough pieces on top, followed by the chopped pecans if using.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set and a toothpick inserted comes out clean.
  7. Allow the cheesecake to cool at room temperature for at least 30 minutes, then refrigerate for at least 2 hours before serving.
  8. Before serving, dust the top with powdered sugar for an extra touch.
