  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the shredded chicken, black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together the lime juice, olive oil, ground cumin, chili powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss gently to combine, ensuring everything is evenly coated.
  4. Taste and adjust seasoning if necessary, adding more salt, pepper, or lime juice as desired.
  5. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
