Ingredients
  

  • 2 pounds baby potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs or oregano
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, salt, black pepper, and Italian herbs. Toss until the potatoes are well coated.
  3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through for even cooking.
  5. Remove the baking sheet from the oven and sprinkle the cheddar and Parmesan cheeses evenly over the potatoes.
  6. Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with chopped fresh parsley before serving.
