Ingredients
  

  • 2 cups shredded carrots

  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

  1. In a large mixing bowl, combine the shredded carrots, diced apples, raisins, and chopped walnuts.
  2. In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, and salt until smooth.
  3. Pour the yogurt dressing over the carrot and apple mixture.
  4. Toss everything together until the salad is well coated with the dressing.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
