  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls halved
  • 1 cup fresh basil leaves torn
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, and torn basil leaves.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
