Step-by-Step Instructions for Broccoli Cheesy Chicken
  1. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
  2. Season chicken breast pieces with salt and pepper. Add chicken to the skillet, spread evenly, and cook for 6-8 minutes until browned and cooked through.
  3. Add minced garlic to the pan and sauté for another minute until fragrant, stirring constantly.
  4. Push the chicken mixture to one side and pour in another tablespoon of olive oil. Add the rice, stirring for 2-3 minutes until lightly toasted.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 12 minutes.
  6. Stir in broccoli florets, cover, and cook for an additional 8 minutes until bright green and tender.
  7. Remove from heat and stir in half of the shredded cheddar cheese until melted. Sprinkle the remaining cheese on top, cover, and let sit for 2-3 minutes.
