- In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent.
- Season chicken breast pieces with salt and pepper. Add chicken to the skillet, spread evenly, and cook for 6-8 minutes until browned and cooked through.
