Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust for spice preference
  • 1 tablespoon honey
  • 2 teaspoons rice vinegar
  • Chopped green onions for garnish

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Dredge each piece of chicken in the flour mixture, shaking off the excess.
  3. Dip the floured chicken into the beaten eggs, allowing any excess to drip off.
  4. Coat the chicken in panko breadcrumbs, pressing gently to adhere.
  5. Place the breaded chicken pieces on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown and cooked through.
  6. While the chicken is baking, prepare the sauce by mixing mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl until smooth.
  7. Once the chicken is done, toss it in the sauce until evenly coated.
  8. Serve immediately, garnished with chopped green onions.
