Coat the chicken in panko breadcrumbs, pressing gently to adhere.
Place the breaded chicken pieces on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown and cooked through.
While the chicken is baking, prepare the sauce by mixing mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl until smooth.
Once the chicken is done, toss it in the sauce until evenly coated.
Serve immediately, garnished with chopped green onions.
