Place each salmon fillet on a piece of aluminum foil, shiny side up.
Brush the olive oil mixture generously over each fillet.
Sprinkle the grated Parmesan cheese evenly over the top of each fillet.
Place lemon slices on top of the cheese-covered salmon.
Fold the foil around the salmon to create a sealed packet, ensuring no steam can escape.
Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
Carefully open the foil packets (watch out for steam) and garnish with fresh parsley if desired.
