Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together the Dijon mustard, minced garlic, olive oil, honey, salt, black pepper, and lemon juice until well combined.
Place the salmon fillets skin-side down on the prepared baking sheet. Brush the Dijon mixture generously over the top of each fillet.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley and serve with lemon wedges.
