Ingredients
  

  • 8 ounces penne pasta
  • 1 block 8 ounces feta cheese
  • 1 pint cherry tomatoes about 2 cups
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese for serving optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the cherry tomatoes, feta cheese, olive oil, minced garlic, dried oregano, red pepper flakes, salt, and pepper. Toss everything together until well mixed.
  3. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the tomatoes are blistered and the feta is soft and slightly golden.
  4. While the feta and tomatoes are baking, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  5. Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta and tomatoes together to create a creamy sauce.
  6. Add the cooked penne pasta to the baking dish and toss to combine, ensuring the pasta is well coated with the sauce.
  7. Serve immediately, garnished with fresh basil leaves and grated Parmesan cheese if desired.
