Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the shredded cheddar cheese, crumbled bacon, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Cook the frozen tater tots according to package instructions until they are golden brown and crispy, usually about 20-25 minutes.
Once the tater tots are cooked, remove them from the oven and let them cool for a few minutes.
Using a small spoon or your fingers, carefully create a pocket in each tater tot by gently squeezing the sides.
Stuff each tater tot with the cheese and bacon mixture, pressing down gently to seal.
Return the stuffed tater tots to the baking sheet and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool slightly. Garnish with sliced green onions and serve with sour cream if desired.
