Ingredients

  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped spinach
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9-inch pie dish or oven-safe skillet with olive oil.
  2. In a large mixing bowl, whisk together the chickpea flour, water, nutritional yeast, baking powder, turmeric, garlic powder, onion powder, salt, and black pepper until smooth.
  3. Fold in the chopped spinach, bell pepper, onion, and cherry tomatoes until evenly combined.
  4. Pour the mixture into the prepared pie dish or skillet, spreading it out evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the frittata is firm and golden on top.
  6. Let it cool for a few minutes before slicing and serving.
