Description
A refreshing and healthy chicken salad made with tzatziki ingredients, perfect for a light meal.
Ingredients

- 3 cups cooked chicken, shredded
- 1 cup plain Greek yogurt
- 1 cup cucumber, grated and drained
- 1/4 cup fresh dill, chopped
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes, halved
Instructions
- In a large bowl, combine the shredded chicken, Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, salt, black pepper, and paprika. Mix well until all ingredients are evenly coated.
- Gently fold in the red onion and cherry tomatoes.
- Taste and adjust seasoning if necessary.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled on a bed of greens, in a wrap, or with pita bread.
Notes
- For added crunch, mix in some diced bell peppers or celery.
- Substitute the chicken with canned tuna or chickpeas for a different protein option.
