- 1 cup cherry tomatoes, halved
- 1 cup spinach leaves
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, Italian seasoning, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.
- Add the minced garlic and cherry tomatoes to the skillet. Sauté for an additional 2-3 minutes until the tomatoes start to soften.
- Stir in the spinach leaves and cook until wilted, about 1-2 minutes.
- Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the Parmesan cheese until melted and smooth.
- Add the cooked penne pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
- Serve immediately, garnished with fresh basil leaves.
