Description

Tuscan Chicken Pasta is a creamy and flavorful dish featuring tender chicken, fresh vegetables, and a rich sauce, perfect for a comforting meal.

Ingredients

Scale
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces, Italian seasoning, salt, and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.
  3. Add the minced garlic and cherry tomatoes to the skillet. Sauté for an additional 2-3 minutes until the tomatoes start to soften.
  4. Stir in the spinach leaves and cook until wilted, about 1-2 minutes.
  5. Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the Parmesan cheese until melted and smooth.
  6. Add the cooked penne pasta to the skillet and toss to combine, ensuring the pasta is well coated with the sauce.
  7. Serve immediately, garnished with fresh basil leaves.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream.
  • Add red pepper flakes for a spicy kick or include other vegetables like bell peppers or zucchini for extra nutrition.
