Description

Turkey Taco Stuffed Sweet Potatoes are a delicious and healthy meal option, combining the flavors of taco filling with the sweetness of baked sweet potatoes.


Ingredients

  • 2 medium sweet potatoes
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F. Pierce the sweet potatoes several times with a fork and place them on a baking sheet. Bake for 45-60 minutes, or until tender.
  2. While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Stir in the chili powder, cumin, paprika, salt, and black pepper. Mix well and cook for another 2 minutes.
  4. Add the black beans, corn, and salsa to the turkey mixture. Stir to combine and cook for an additional 3-4 minutes until heated through.
  5. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and gently fluff the insides with a fork.
  6. Spoon the turkey mixture generously into each sweet potato half. Top with shredded cheddar cheese, diced avocado, and chopped cilantro. Serve with lime wedges on the side.

Notes

  • For added flavor, try adding a dollop of sour cream or Greek yogurt on top before serving.
  • You can substitute ground turkey with lean ground beef or chicken for a different taste.
