Instructions

  1. In a large bowl, whisk together the brown sugar, soy sauce, ketchup, apple cider vinegar, minced garlic, ground ginger, and black pepper until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later.
  4. Sear the chicken thighs in the skillet for about 5 minutes on each side, or until they are golden brown.
  5. Pour the reserved marinade over the chicken in the skillet. Bring to a simmer, then reduce the heat to low. Cover and cook for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Add the pineapple chunks to the skillet during the last 5 minutes of cooking, allowing them to heat through.
