Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup fresh spinach, chopped
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F.
  2. In a medium bowl, combine the chopped spinach, cream cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
  4. Stuff each chicken breast with the spinach and cheese mixture, securing the opening with toothpicks if necessary.
  5. Rub the outside of the chicken breasts with olive oil and sprinkle with paprika, salt, and pepper.
  6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

  • For a twist, try adding sun-dried tomatoes or artichoke hearts to the stuffing mixture for extra flavor.
