- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 cup fresh spinach, chopped
- 4 ounces cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 375°F.
- In a medium bowl, combine the chopped spinach, cream cheese, mozzarella cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
- Stuff each chicken breast with the spinach and cheese mixture, securing the opening with toothpicks if necessary.
- Rub the outside of the chicken breasts with olive oil and sprinkle with paprika, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- For a twist, try adding sun-dried tomatoes or artichoke hearts to the stuffing mixture for extra flavor.
- You can also substitute the mozzarella with feta cheese for a tangy variation.
