Description

Spicy Salmon Rice Bowls are a flavorful and nutritious meal featuring tender salmon, fresh vegetables, and jasmine rice, all topped with a spicy sauce.


Ingredients

  • 2 cups cooked jasmine rice
  • 1 pound salmon fillets
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 avocado, sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup shredded carrots
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix together olive oil, soy sauce, sriracha, garlic powder, and ginger powder.
  3. Place the salmon fillets on the prepared baking sheet and brush the sauce mixture generously over each fillet.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until it flakes easily with a fork.
  5. While the salmon is baking, prepare the rice bowls. In serving bowls, layer the cooked jasmine rice as the base.
  6. Once the salmon is done, remove it from the oven and let it cool for a few minutes. Flake the salmon into large pieces and place it on top of the rice.
  7. Top the bowls with sliced avocado, cucumber, shredded carrots, and chopped green onions.
  8. Sprinkle sesame seeds over the top for garnish. Serve immediately.
