A hearty and flavorful Spanish Chorizo and Potato Stew that combines the rich taste of chorizo with tender potatoes and aromatic spices.

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound Spanish chorizo, sliced
- 1 pound potatoes, peeled and diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 4 cups chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and sliced chorizo, cooking for another 3-4 minutes until the chorizo is browned and fragrant.
- Add the diced potatoes, diced tomatoes (with their juices), chicken broth, smoked paprika, and dried oregano. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 25-30 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
Notes
- For a spicier kick, add a pinch of red pepper flakes or a diced jalapeño when cooking the onions.
- You can substitute the chorizo with turkey or chicken sausage for a lighter version, or use a vegetarian sausage for a meatless option.
