Description

A hearty and flavorful Spanish Chorizo and Potato Stew that combines the rich taste of chorizo with tender potatoes and aromatic spices.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound Spanish chorizo, sliced
  • 1 pound potatoes, peeled and diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Stir in the minced garlic and sliced chorizo, cooking for another 3-4 minutes until the chorizo is browned and fragrant.
  3. Add the diced potatoes, diced tomatoes (with their juices), chicken broth, smoked paprika, and dried oregano. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 25-30 minutes, or until the potatoes are tender.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier kick, add a pinch of red pepper flakes or a diced jalapeño when cooking the onions.
  • You can substitute the chorizo with turkey or chicken sausage for a lighter version, or use a vegetarian sausage for a meatless option.
