- 1 pound beef chuck roast, cut into 1-inch pieces
- 4 cups beef broth
- 2 cups water
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
- 3 cloves garlic, minced
- 1 tablespoon brown sugar
- 8 ounces ramen noodles
- 2 cups bok choy, chopped
- 2 green onions, sliced
- 2 soft-boiled eggs (optional)
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the beef chuck, beef broth, water, soy sauce, hoisin sauce, sesame oil, ginger, garlic, and brown sugar. Stir well to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
- About 30 minutes before serving, add the ramen noodles and bok choy to the slow cooker. Stir to combine and cover again.
- Once the noodles are cooked, taste and adjust seasoning with salt and pepper as needed.
- Serve the ramen in bowls, topped with sliced green onions and a soft-boiled egg if desired.
Notes
- For a spicier kick, add a teaspoon of red pepper flakes or a splash of sriracha to the broth.
- Substitute the beef with chicken thighs or tofu for a different protein option.
