Description

A delicious homemade shrimp fried rice recipe that is easy to prepare and full of flavor.


Ingredients

  • 2 cups of cooked rice
  • 1 pound of shrimp, peeled and deveined
  • 2 tablespoons of vegetable oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of frozen peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons of soy sauce
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat.
  2. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of oil and sauté the onion and garlic until fragrant.
  4. Add the frozen peas and carrots and cook until heated through.
  5. Push the vegetables to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  6. Add the cooked rice to the pan and mix everything together.
  7. Stir in the soy sauce, salt, and pepper.
  8. Return the shrimp to the pan and mix until everything is well combined and heated through.
  9. Garnish with chopped green onions before serving.

Notes

  • Use day-old rice for the best texture.
  • Adjust the soy sauce to taste.
  • Feel free to add other vegetables like bell peppers or broccoli.
